How to Make Chicken Lollipops
Prepare the Chicken:
- Take chicken wings (10–12 pieces) and separate the drumette and wingette.
- Push the meat down towards one end to form a lollipop shape.
- Set aside while preparing the marinade.
Make the Marinade:
- In a bowl, mix:
- Ginger-garlic paste (1 tbsp)
- Salt (1 tsp, or to taste)
- Black pepper (½ tsp)
- Red chili powder (1 tsp, for spice)
- Paprika (½ tsp, for color)
- Soy sauce (1 tbsp)
- Hot sauce (1 tbsp)
- Vinegar (1 tbsp)
- Cornflour (2 tbsp, for crispiness)
- All-purpose flour (2 tbsp, for coating)
- Egg (1, beaten, for binding)
- Mix well and marinate the chicken for 30 minutes.
Prepare the Crispy Coating:
- In a separate bowl, mix:
- Breadcrumbs (1 cup, for extra crunch)
- A pinch of salt and red chili powder (for extra flavor)
Coat the Chicken Lollipops:
- Take each marinated lollipop, dip it in breadcrumbs, and press gently to coat well.
- Let the coated lollipops rest for 10 minutes for better crispiness.
Fry or Bake:
- Fried: Heat oil in a deep pan and fry on medium heat until golden brown and crispy (about 5–6 minutes per batch).
- Baked: Preheat oven to 200°C (400°F), place lollipops on a baking tray, brush with oil, and bake for 18–20 minutes, flipping halfway.
- Air-Fried: Cook at 180°C (350°F) for 12–15 minutes, shaking halfway.
Prepare the Spicy Sauce (Optional):
- Heat 1 tbsp oil in a pan and sauté garlic (1 tsp).
- Add soy sauce (1 tbsp), ketchup (2 tbsp), hot sauce (1 tbsp), vinegar (1 tbsp), and honey (1 tsp).
- Toss the fried chicken lollipops in the sauce for a spicy glaze.
